Why Gluten-Free?

I cook gluten free because I have to, I am a celiac, I have celiac disease. Its not a special weight-loss diet, its not a magical formula. I have to be extremely careful in what I eat in order to stay well. This is very hard given the abundance of wheat, rye and barley in the Western diet.

This means that I can't have even a pinch of regular bread, cookie or cake. If I want to eat baked goods, I have to make them myself. You might think that this would be tough and hard to resist temptation sometimes. Well, it once was, but now I have learned, the hard way, that even the tiniest pinch can make me feel sick, like I have a cold or the flu. The gluten also affects my moods and just makes me feel nasty, grouchy and extremely unhappy.
