I cook gluten free because I have to, I am a celiac, In April 2000, I discovered that I have celiac disease. Its not a special weight-loss diet, its not a magical formula. I have to be extremely careful in what I eat in order to stay well. This is very hard given the abundance of wheat, rye and barley in the Western diet.

This means that I can't have even a pinch of regular bread, cookie or cake. It means that handling wheat flour or wheat based baked goods can cause me to break out in a painful rash. These recipes are ones that I've come up with in an attempt to eat well and spread the happiness of good food.
