From Ein Buch von guter spise: 59. Einen krapfen ( A krapfen)

How you want to make a fastday krapfen of nuts with whole kernels. And take as many apples thereunder and cut them diced, as the kernel is, and roast them will with a little honey and mix with spices and put it on the leaves, which you made into krapfen, and let it bake and do not oversalt.

 

My recreation of Einen krapfen

Ingredients

3 large apples (I used granny smith)
1/2 c honey
1 c walnuts, chopped
1 T cinnamon
1/4 t cloves
1/4 t ginger
dash nutmeg
dash salt
1 single crust pie shell

Method

Preheat oven to 350 degrees F

Peel and dice the apples. Place them in a medium sized sauce pan with the honey and cook until the apples are slightly softened.

Add walnuts and spices and mix well.

Place apple/nut mixture in prepared uncooked pie crust.

Bake at 350 degrees F for 30-40 mins

This was a bit hit at the class that I took it to. Everyone loved it.
